Kale Soup

I got this recipe from blogger : Katy Roach @livingmybeststyle and she is right - it does NOT disappoint.

It's beginner friendly, SO FLAVORFUL, so perfect for fall, it's light but hearty at the same time. 

I'll list the full recipe but depending on how many people you are cooking for, you can cut it down! For Scott & I, I make half of this and it lasts me leftovers all week. 

Ingredients :

-2 lbs Italian Sausage

-2 yellow onions

-3-4 russet potatoes

-1 bunch of kale

-3 cartons of chicken broth

-1 cup half & half

-1 cup small shell noodles

-3 TBS butter

-1 tsp chili flakes

-1 tsp onion powder

-1 tsp garlic powder

-1 TBS oregano

-1 TBS basil

-2+ TBS minced garlic (I love garlic so I go heavy on this!)

Directions:

1. in a large pot on the stove, melt butter, then add Italian sausage, diced onion, and all spices, and cook through on medium-high heat

2. add chicken broth & cover on low for the next 4-5 hours

3. about 1 hour before eating, add in diced potatoes, half&half, and kale.

4. add shells a few minutes before eating.
